  • Freeze-dried fruit is whole fruit that has been preserved by removing almost all of its moisture through a controlled process called lyophilization.

    The fruit is first frozen, then placed in a low-pressure chamber where frozen water sublimates—turns directly from ice to vapor—leaving behind a lightweight, porous fruit structure.

    The result retains the fruit’s natural shape, color, aroma, and concentrated flavor, while preserving most vitamins, minerals, and natural sugars without the need for added preservatives or sweeteners.

  • Freeze drying removes water by sublimation at low temperatures, preserving structure, flavour, and nutrients, and producing a light, crisp product with long shelf life.

    Dehydration removes water by evaporation with heat, yielding a denser, chewier product with more concentrated and sometimes altered flavours and a shorter shelf life.

    Both have distinct advantages depending on desired texture, flavour fidelity, storage needs, and use.

  • In Alexandra New Zealand, we process and manufacture the product ourselves without any contractors.

    All our fruit is also sourced from the area. No further than the vicinity of Roxburgh, Alexandra, Cromwell, or Clyde.

    We do like to produce small amounts of seasonal fruits grown within New Zealand like our red kiwifruit, but no imports.

  • Due to the limited capacity of our machine, we can only do small batches at a time. We are working on getting a second commercial machine by winter 2026 to increase production by next summer.

  • We offer a fresh weight equivalent pricing model in line with industry standards. Price depends on how much prep is required from your raw materials and how many kgs we can realistically fit within a batch.
